Wild Louisiana Shrimp

Louisiana White Shrimp are harvested at night when they are feeding near the surface. Specialized nets are used that skim the inland waters of the Gulf of Mexico. Shrimp nets use by-catch reduction and turtle exclusion devices---some of the fish and squid are retained and sold. The net is hauled aboard often so that unintentional by-catch can be released and the live shrimp quickly sorted by size. The shrimp are rinsed in ice water, bagged, put into boxes and then loaded into the freezer aboard the F/V Ann Marie to be quick-frozen--- suspended in their natural state.

Taste and texture-destroying enzyme action (which can accelerate with slow freezing or controlled temperatures fluctuations) never had an opportunity to degrade the quality of the shrimp from Anna Marie Seafood!
